“We opened our tasting room in 2006,” explained Owner Tamre Varallo of Spring Lakes Winery in Lockport, she added, “We are three generations of homemade winemakers, and we were fourth to open on the trail.”
The areas wine trail has expanded since Spring Lake’s opening, now with 24 locations along the way. The attractions development has been good for business at Spring Lake Winery, and it may be time to expand services.
“We’re doing this to build a boutique hotel,” Varallo shared while a bulldozer cleared land on the frontend of the property. “We’re in the starting process,” she further explained, adding, “We haven’t gotten too far yet, we’re just dreaming right now.”
Varallo detailed a bit about how her operations run, from interactions with visitors to the winemaking process itself. “We do some barrel aging, but mostly steel fermentation, and we add the least amount of chemicals to our process. We try to be as organic as possible.”
On serving her guests, Varallo said, “We’re glad to be able to serve the customers. It’s been kind of lonely.” Lastly, remarking, “Really, the whole basis of our operations is Italian hospitality. So, we like to take care of people.”
